Just opened an on-line account which is horribly addictive and I am betting on all sorts of weird matches - Vietnamese Premier League, Peruvian second division, Swedish u-19 games etc . How do the betting companies decide on which matches to do and do they have observers at every game updating the odds - anyone know how it all works??

Most in-play football games that are not live on TV will be done by a company called running ball. They basically send a couple of people to the match with a device so that when Team X is attacking they can press a button, same with goals, corners, throw ins, goal kicks and free kicks. If communication is lost with the 1 or 2 people that they have at the game, then the market will be suspended until this is sorted out. Was betting on a game that suspended for about 50 minutes once, which was frustrating.

With Betfair, some of the in play markets won't be managed, so it is up to you to keep track of what is going on the game as there is an Betfair employee actively watching the game and it might not get suspended when a goal goes in or a penalty/red card. This may have changed and it might all be done by running ball now. The rest of the football will be done off of live streams, which will have someone watching and suspending as and when necessary.

In terms of odds, Betfair is customer driven so the odds basically manage themselves however they do seed a few of the smaller markets. In this case, and also for fixed odds betting (like Bet365, Ladbrokes, William Hill) there will be an odds model built that can be plugged in and automatically update the odds based on a few factors. Companies like Sporting Index sell these models to the other betting companies.

Keep your stakes low.

The Shergar Cup is a spectacle but not a betting heat.

If anything I'd be looking at whatever Frankie Dettori rides, he's bound too have a winner at not too short a price (they always make the races competitive so usually no shorter than 2/1 the field).

Another I'd look at is Notarised in the 2nd race because it's a jockey riding for his trainer which is unusual in the Shergar Cup. Knows the horse better than anyone else which is always a huge factor. Same can actually be said for Great Glen in the race after.
