Done two 8 hour shifts this weekend, so elected for a bbq to wrap it up. Baby back ribs, with a dry rub of paprika, smoked paprika, onion powder, salt, chili powder, garlic powder & a bit of cumin. Done on the kettle, offset, for about an hour. Smothered in Paul Newman Sticky BBQ marinade for the last 15 minutes. Also did a pack of Chicken Wings, the same way (40 minutes).

Served with a nicely cut salad & some Waitrose reduced fat coleslaw.

I feel good about myself now.

I had Roast Rump of Lamb, Roast Potatoes, Yorkshire, Veg, Gravy and loads of Mint Sauce.

Waitrose do a two person takeaway deal for £10. Felt a bit lazy this weekend and didn't fancy cooking, what with all the football on etcs.

Saturday - Chicken Vindaloo, vegetable pilau rice, sag aloo.

Sunday - Butter Chicken, vegetable pilau rice, red pepper pakoras.

Tonight - Home made Chilli Con Carne.

made some pizza dough on saturday...so had mushroom pizza ...put half the dough in the fridge and by sunday evening it had double in size ..again..so made a calzone with black olives and spinach.. 10 times better than the pizza..fan bl**dy tastic it was. :thup:
will leave the dough to rise for 24hrs next time !

I had fish fingers, chips and baked beans the other day. Unquestionably the best "tea" I've had in months.

Massive Home made salad:

The basics: lettuce, toms, cucumber, radish, red onion.

Extras: Pepperami (vegi) avocado, grilled mushrooms, grilled asparagus.

Dressing: Smoky Chipotle oil plus a small amount of mayonnaise.

Trumping like a good 'un :)
