I think Gullit might be being overlooked here - partly because he only made about 50 appearances for Chelsea, partly because there are so many alternatives, but he was absolutely class in that Chelsea team for a couple of seasons.

I think it's as simple as not having a reliable keeper. At this level tiny differences can be the difference and the impact on players morale knowing that they start each game at least one goal down because the keeper will let one in at some point is debilitating The team drops deeper to compensate...
