Fish pie needs something smoked in it, not just cod. Batter them and have them with chips and peas.

rustic recipe, strong flavour:
baccalà alla livornese
chop some onions (and celery if you like) and brown them in olive oil at medium/low flame, then add peeled tomatoes and a bit of salt, keep it at low temp (the longer the better ~40 minutes at least).
meanwhile cut the cod fillets in chunks (leave the skin on), dust with flour and fry in olive oil, both sides. add white wine and let it evaporate, then put the cod in the tomato sauce.
original recipe says to add diced potatoes, and keep cooking everything together for about 45-60 more minutes. personally, i prefer black olives (you can let cod and tomato cook together for about half an hour if you're hungry and don't want to wait anymore, you need the time if you use potatoes).
olives instead of potatoes makes it similar to the neapolitan style.
more delicate and refined:
baccalà mantecato (typical of venice)
cover the cod with cold water, add 150-200 ml of milk (little more than a quarter pint) and bring to a boil, make it cook for about 20 minutes (it depends on the thickness of the cod), then dry and clean it.
reduce in small bits and put them in a bowl, work the cod with a wooden spoon while continuously adding small quantities of olive oil (like for making mayonnaise) until it gets creamy. you can use a mixer too.
also, if the mixture gets too dry, add some of the water/milk you boiled the cod in.
add salt and pepper to taste, some finely chopped parsley and garlic.
fried polenta goes perfectly with it, but toasted bread works as well.
more of an appetizer maybe, but i could eat a ton of the stuff.
in case you feel fancy and have time to lose:
use baccalà mantecato as filling for homemade ravioli, to be served in a light tomato sauce with onion, black olives and capers.

I'm going to have homemade pizza again tonight, because I feel I deserve it. I'm also going to have a crack at making a steamed pudding, for the first time ever, following this recipe:

Pudding was perfectly cooked (good basic recipe) but needed marmalade instead of jam and maybe some raisins, too. I cooked a cheese and red onion quiche this morning. I'm going to have a dirty great wedge of that with a huge salad, ghost chilli pickled onions, pickles, ham and a generous portion of strong cheddar.

As an aside, how much do people usually pay for chicken breasts? I usually get a pack from Tesco, 950g for £5.50. Today I went to a local butcher and paid £9.55 for three, weighing about a kilo altogether.

Aldi & Lidl tend to be cheapest for kilo packs of chicken breast. Thighs work out better priced but can be a fiddle to remove the bone & skin.
