Is 'nutter' being defined as someone who is eccentric, unhinged, and prone to unusual behaviour, or someone who is simply hard? I think the obvious ones have already been said, such as Di Canio, Repka, Savio, Ravel, and Boogers.
But I'd add Sakho to that list (if not already mentioned).
I saw Gary Charles mentioned. I think I heard he had a drinking problem. I may be wrong.

As an aside, just thinking of non-West Ham nutters from the modern era, and the obvious ones that spring to mind are Maradona, Balotelli, Gazza, Barton and Cantona.

In terms of what a 'nutter' is, I agree it's not about being hard, it's having that thousand-yard stare or simply being out there.
I think an honourable mention to John Pantsil who did a lap of honour on his tod.
Personally, I think Moncur has to be to loopers, looper. I remember once he was warming up and we shouted at him - "how long John?". He looked up and held up 2 fingers. Within 2 minutes of coming on, he had been carded and came running across saying "I ****ing told you".
