Good tips, thanks. Yeah I said to Mrs Sendo at the weekend I really needed a chimney starter. Will have to get one of those.

It had mustard and spice rub too, forgot to mention that. The flavour was good tbf, it was just a it dry. I think I will look for a bone in joint next time too rather than a cheap shitty little one.

Getting a decent pork joint makes a big difference in the end. If you're going to put in the time and effort, you may as well start with the best ingredients you can find. Nothing wrong with a small shoulder joint, but will never be as good as something more substantial, with good fat distribution and the bone for flavour & moisture.

I had a Gozney Roccbox but have just upgraded to the dome, fantastic bit of kit, so much than a pizza oven

Didn't realise they were at Dobbies in Gillingham. With diesel at 132.7 at the Tesco next door, I may as well go and kill two birds.

132.7, that must be the first time fuel has ever been sold at anything other than .9, always baffled me why fuel is the only thing that can be sold

The chimney starter is a gamechanger. I can't believe I've never bought one before. None of this bollocksing about repiling up the coals to make sure they're all getting hot. Just light the chimney, f*** off for 20 minutes, come back to everything white hot.

Anyway, I've had the barbie going a few times this weekend. All grilling though, no more slow smokes for the moment. I made a smashing peri peri marinade Friday, which we had in a ciabatta, and I managed to knock together a top hot sticky sweet spice mix that I grilled some thighs and drumsticks with. That one will be great for slowcooking I think.

I smoked some pork belly on the BBQ last night along with the usual tray of vegetables. I've never really been a huge fan of pork belly, but last nights was unreal. Big slices smothered in some random rub I put together and then indirect for about 2-2.5 hours at a relatively low temp (as best as i could keep it low anyway). So soft and tender and the fatty parts that remained just tasted like more meat rather than a tough chewy exterior.

Leftovers in a toasted sandwich for lunch today i think!!

Back to the drawing board with the ribs. I'm not quite getting the knack of this slow cooking malarky yet.
