100g chorizo - cubed
1 red onion - diced
1 garlic clove - diced
600ml vegetable stock
1 red chilli
salt and pepper to taste
I use a soup maker - but it's easy to do on the stove I guess.
Sweat onions and garlic, then add the chorizo just to seal it off.
Then add everything else and simmer until butternut squash is tender and blitz - makes 4 portions
