What does the term 'conference' mean in football? I mean it makes me think of political or professional gatherings, or even pears. It's been used to describe at least two league competitions.

In regard of sporting competitions, 'Conference' has a very similar meaning to 'League'. The difference is that you're invited to join a Conference, but you apply to join a League (but of course that differentiator has blurred over time).
League comes from ligare, to bind, and indicates a group of people actively joining together for a common aim.
Conferre, bring together, indicates a group of people passively being brought together by invite.
